Kids can be encouraged into the kitchen to cook something they really enjoy eating - like dessert! This pudding for starter cooks is our family favourite. We nicknamed it “icecream pudding”. When it’s straight from the fridge it tastes just like icecream. I hope you agree.

Ingredients

500 mlMilk, full cream
50 gButter, softened
2 TbspCaster sugar, plus 2 Tbsp for sprinkling
2Eggs
1 TbspFlour
1 tspVanilla extract

Directions

  1. Pour milk into a heavy-based saucepan and heat until just below boiling point.
  2. In a bowl, cream the butter and sugar until light and fluffy. Beat in the eggs, one at a time, beating well between each addition. Sift in flour and mix to combine.
  3. Pour on the hot milk, then the vanilla extract and mix well. Return to the washed saucepan and place over a low heat. Cook, stirring continuously until the mixture thickens, but does not boil or it will curdle a little.
  4. Pour into a serving bowl and sprinkle the top with extra caster sugar to prevent a skin forming. Serve warm or cold with cooked or raw fruit and icecream. Add a sprinkle of cinnamon if you wish.
