Recipe for Amish Chicken

If you are looking for an easy-to-make baked Amish chicken recipe, then you have come to the right place.

This recipe for Amish chicken is made with thin-sliced chicken breast (chicken cutlets or tenderloins) that's been dipped in an egg and milk slurry and crushed Rice Krispies. The Rice Krispies create a crunchy texture on the outside, while the chicken is beautifully moist on the inside.

Amish Food - Does it have enough flavor?

You may have gathered by now, that the Amish eat a lot of rich food and lots of carbohydrates. Amish women tend to do a lot of baking, and sugar is an added ingredient in many recipes.

Although some Amish families are more concerned about their diets for better health. And they will substitute white sugar with raw sugar, honey, or maple syrup.

You may also have noticed that a lot of Amish recipes don't have a lot of spices. Most Amish recipes are pretty basic, using salt and pepper and occasionally a few other spices.

In my opinion, most Amish-made food is delicious. And home-cooked meals always taste better than store-bought frozen meals, etc.

But if you're used to spicy, you might find some of their dishes rather bland.

And honestly, I like flavorful dishes. I love Asian and Mexican cuisine with all their different spices. (We eat a lot of spicy food at our house.) So I tend to add extra spices, etc. to most of my recipes. I take my Amish recipes and add a twist of my own to create more flavor.

I mostly try to stay true to the Amish recipes that I post here, but some of them do get added spices. And if you use my recipes, feel free to add or subtract spices as you wish.

A lot of the Amish don't use many different spices, although some will add more. Remember there is a lot of variety among the Amish, and their recipes are not all the same.

Amish Baked Chicken Recipe

Growing up, we always butchered our own chickens, as do a lot of the Amish. Even if they don't live on a farm, most of them still have a little farmette with a few animals. So home-grown free-range chicken is a staple in many Amish homes.

For this baked thin chicken breast recipe, you don't want huge pieces of chicken.

Sometimes when you buy chicken breasts, they come in huge pieces. But it's easy to slice them in half and cut them into smaller pieces. Tenderloins are also great to use for this baked chicken recipe.

Dredge the chicken in the egg and milk slurry and then dip it into crushed Rice Krispies. This process is a bit messy, but it's completely worth it.

Bake the Rice Krispie chicken until the outside is nice and crispy and the internal temperature has reached 160 degrees.

It's risky to eat undercooked chicken, and I hate the texture of chicken that was not cooked long enough. But I also despise dry meat. I like to cut into a perfectly cooked, moist piece of chicken.

And thankfully, it's not hard to achieve that perfection with this Amish baked chicken breast, since the outside is coated and helps to trap in the moisture.

What Can I serve with my Crispy Baked Chicken Breast?

First, let me say that this chicken is great to eat on its own. You don't need any dipping sauce, etc.

But if you've never tried the Chick-fil-A dipping sauce (affiliate link), you should get some and try it with this crispy chicken. I think it pairs perfectly as a dipping sauce.

Ingredients

  • 2 - 2 1/2 lb. boneless, skinless chicken breast (cut into slices or strips) or tenderloins
  • 1 large egg
  • 3/4 c. milk
  • 3/4 c. all-purpose flour
  • 1 tsp. salt
  • 1 tsp. garlic powder
  • 1/4 tsp. black pepper
  • 1 tsp. poultry seasoning, optional
  • 4 1/2 c. crushed Rice Krispies
  • 1 tsp. paprika
  • 4 Tbs. melted butter

Instructions

  • Preheat oven to 375°.

  • Line a baking pan (or cookie sheet with sides) with aluminum foil and spray it with cooking spray.

  • In a small bowl, whisk the egg and milk, add flour, salt, garlic powder, pepper, and poultry seasoning. Whisk until creamy.

3/4 c. milk, 3/4 c. all-purpose flour, 1 tsp. salt, 1 tsp. garlic powder, 1/4 tsp. black pepper, 1 tsp. poultry seasoning, optional, 1 large egg

  • Place the Rice Krispies into a ziplock bag and crush them with a rolling pin. It's ok if some whole pieces remain, you don't want to turn them into powder.

    4 1/2 c. crushed Rice Krispies

  • Place the crushed Krispies into a small bowl. Add the paprika and mix.

    1 tsp. paprika

  • Dip each piece of chicken into the batter to cover. Then dip the battered chicken into the crushed rice crispies. Cover completely.

2 - 2 1/2 lb. boneless, skinless chicken breast (cut into slices or strips) or tenderloins

  • Place the pieces of chicken into the prepared pan. Then drizzle the chicken with the melted butter.

    4 Tbs. melted butter

  • Bake, uncovered, for about 35 - 40 minutes. (This will depend on how big your pieces of chicken are.) The internal temperature needs to be at least 160°.

Notes

If you buy huge chicken breasts, slice them in half and then cut them into smaller pieces. It's better to have pieces about the size of chicken strips.

You could also chop the Rice Krispies in a food processor, but it will only take a few pulses. Don't chop them into a fine powder, as the Rice Krispie pieces will add an extra crunch.
